- Butter – 1/4 cup / 57 g
- Fresh sage leaves – 10 leaves
Instructions
- In a large mixing bowl, combine the flour with a pinch of salt. Make a well in the center and crack in the eggs. Gradually mix the flour into the eggs until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough rests, prepare the filling. Blanch the bitter herbs or dandelion greens in boiling water for 2 minutes, then drain and squeeze out excess water. Chop finely.
- In a bowl, mix the chopped greens with ricotta, Parmigiano-Reggiano, nutmeg, salt, and black pepper.
- Divide the rested dough into four portions. Roll each out into a thin sheet. Cut into 3-inch squares.
- Place a teaspoon of filling in the center of each square. Fold diagonally to form a triangle and seal the edges, ensuring there are no air pockets.
- Cook the tortelli in a large pot of salted boiling water until they float to the top, about 3-4 minutes.
- In a separate pan, melt the butter over medium heat. Add the sage leaves and cook until crispy.
- Drain the tortelli and gently toss with the sage butter. Serve hot.
