Instructions
- In a small bowl, dissolve the yeast and sugar in lukewarm water and let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine flour, anise seeds, sesame seeds, sea salt, and fennel seeds if using.
- Add the yeast mixture and olive oil to the dry ingredients. Mix until you achieve a soft, elastic dough.
- Knead the dough on a floured surface for about 5 minutes. Form it into a ball and place it in a lightly oiled bowl.
- Cover the bowl with a cloth and let the dough rise in a warm place for about 1 hour, or until doubled in size.
- Preheat the oven to 375°F (190°C). Divide the dough into 12 equal pieces and roll each piece into a thin circle.
- Place the tortas on a baking sheet lined with parchment paper. Sprinkle a pinch of sugar over each torta.
