Originating from Japan, Tororo Soba is a traditional Japanese dish featuring nutritious soba noodles served with a unique grated yam topping known as tororo. Ingredients

  • Soba noodles – 12 oz / 340 g
  • Yamaimo (Japanese mountain yam) – 200 g
  • Dashi broth – 4 cups / 960 ml
  • Soy sauce – 2 tbsp / 30 ml
  • Mirin – 1 tbsp / 15 ml
  • Green onions – 2 stalks, finely chopped
  • Nori (seaweed) – optional, for garnish

Instructions

  1. Cook the soba noodles according to package instructions. Rinse under cold water and drain well.
  2. In a pot, bring dashi broth to a gentle boil. Add soy sauce and mirin to taste, then keep warm.
  3. Peel and finely grate the yamaimo to create a sticky paste.
  4. Distribute the soba noodles equally into bowls.
  5. Pour warm dashi broth over the noodles.
  6. Top with a generous spoonful of tororo (grated yam) and garnish with green onions and, if desired, nori strips.
