  • chicken broth – 6 cups / 1.5 liters
  • lean ground pork – 200 g / 7 oz
  • firm tofu – 200 g / 7 oz, cubed
  • baby bok choy – 2 bunches, chopped
  • carrots – 2, sliced
  • onion – 1, chopped
  • soy sauce – 2 tablespoons
  • fish sauce – 2 tablespoons
  • white pepper – 1/2 teaspoon
  • fresh cilantro – 2 tablespoons, chopped
  • green onions – 2, thinly sliced

Instructions

  1. In a large pot, bring the chicken broth to a simmer over medium heat.
  2. Add the ground pork to the broth, breaking it up into small pieces with a spoon.
  3. Stir in the onion, carrots, and cook for about 5 minutes until they begin to soften.
  4. Add the tofu cubes, bok choy, soy sauce, and fish sauce.
  5. Simmer the soup for another 10 minutes, allowing the flavors to meld.
