Ingredients

  • lamb shoulder or beef – 1 kg / 2.2 lbs
  • eggplants – 2 medium (about 400 g / 14 oz)
  • tomatoes – 2 large (about 300 g / 10.5 oz)
  • green peppers – 2 (about 100 g / 3.5 oz)
  • red onions – 2 medium (about 150 g / 5.3 oz)
  • garlic cloves – 4
  • salt – 1 tablespoon
  • black pepper – 1 teaspoon
  • olive oil – 2 tablespoons
  • bay leaves – 2

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the lamb shoulder or beef into medium-sized cubes.
  3. Slice the eggplants, tomatoes, and green peppers into rounds.
  4. Peel and slice the red onions and garlic cloves.
  5. In a large baking tray or casserole, layer the vegetables and meat: start with a layer of eggplant, followed by tomatoes, peppers, onions, and garlic. Place the meat evenly on top.
  6. Season each layer with salt and black pepper. Scatter bay leaves throughout.
  7. Drizzle the olive oil over the entire dish.
  8. Cover securely with aluminum foil and bake for about 2 hours until the meat is tender and the vegetables are cooked through.
