Ingredients

  • feta cheese – 200 g / 7 oz
  • kefalotyri cheese – 100 g / 3.5 oz
  • all-purpose flour – 100 g / 3/4 cup
  • egg – 1, beaten
  • milk – 50 ml / 1/4 cup
  • dry breadcrumbs – 100 g / 1 cup
  • fresh parsley – 2 tbsp, finely chopped
  • olive oil – for frying
  • black pepper – 1/4 tsp

Instructions

  1. Grate the feta and kefalotyri cheese into a large mixing bowl.
  2. Add flour, beaten egg, milk, parsley, and black pepper. Mix thoroughly until a sticky dough forms.
  3. Using your hands, shape the mixture into small balls, about the size of a walnut.
  4. Roll each ball in breadcrumbs until fully coated.
  5. Heat olive oil in a pan over medium heat.
  6. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per batch.
  7. Drain on a paper towel-lined plate and serve warm.
