Tinolang Manok is a classic Filipino chicken soup, widely cherished for its comforting and nourishing properties. Originating from the Philippines, this dish typically features tender chicken pieces simmered in a savory broth with ginger, green papaya, and fresh chili leaves, known locally as dahon ng sili. It’s a favorite family meal because of its simplicity, rich flavors, and adaptability, often served with steamed rice for a complete and satisfying experience.

Ingredients

  • chicken pieces (preferably bone-in) – 1 kg / 2.2 lbs
  • water – 5 cups / 1.2 liters
  • ginger, sliced thinly – 50 g / 1.8 oz
  • medium onion, chopped – 1
  • garlic cloves, minced – 4
  • green papaya, peeled and cut into wedges – 1 small / 300 g
  • chili leaves (dahon ng sili) or spinach leaves – 2 cups / 80 g
  • fish sauce – 2 tablespoons
  • salt and pepper – to taste

Instructions

  1. In a large pot, bring water to a boil then add chicken pieces.
  2. Add sliced ginger, chopped onion, and minced garlic. Simmer for 30 minutes until the chicken is tender.
  3. Add green papaya wedges and continue to simmer until the papaya is just tender, about 5 minutes.
  4. Season the broth with fish sauce, salt, and pepper.
  5. Stir in the chili leaves or spinach and cook for another 2 minutes or until the leaves are wilted.
  6. Serve hot with steamed rice.
