Tinola is a classic Filipino soup known for its savory broth that highlights the simplicity and freshness of its ingredients. Traditionally, this comforting dish is crafted using chicken, green papaya, and chili leaves, all simmered together to create a delicious and wholesome meal. Ingredients
- chicken pieces – 1.5 lbs / 680 g
- green papaya, peeled and sliced – 1 medium / 500 g
- malunggay leaves (or spinach as a substitute) – 1 cup / 30 g
- ginger, sliced – 1 thumb-sized piece / 20 g
- onion, chopped – 1 large / 150 g
- garlic, minced – 3 cloves / 15 g
- fish sauce – 2 tbsp / 30 ml
- water – 6 cups / 1.4 liters
- salt and pepper – to taste
Instructions
- Heat a large pot over medium heat and add the chicken pieces. Sauté until they are lightly browned.
- Add the garlic, onion, and ginger to the pot and cook until the onion becomes translucent and fragrant.
- Pour the fish sauce into the pot, stirring to coat the chicken evenly.
- Add water and bring the mixture to a boil. Lower the heat and let it simmer for 30 minutes or until the chicken is tender.
- Add the sliced green papaya and continue to simmer for another 5-10 minutes or until the papaya softens.
- Stir in the malunggay leaves and allow them to wilt for a couple of minutes. Season the soup with salt and pepper to taste.
- Serve hot, ensuring each bowl gets a generous amount of soup and solids.
