Ingredients

  • cooked jasmine rice – 4 cups / 800 g
  • tinapa (smoked fish) – 2 fillets / 200 g
  • onion – 1 medium, chopped / 150 g
  • garlic – 3 cloves, minced
  • oil – 2 tbsp / 30 ml
  • soy sauce – 2 tbsp / 30 ml
  • calamansi juice – 2 tbsp / 30 ml
  • spring onions – 2 stalks, chopped
  • salt and pepper – to taste

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Sauté the chopped onions and minced garlic until the onions are translucent.
  3. Add the tinapa fillets, breaking them into small pieces as they cook. Stir well.
  4. Stir in the cooked rice, ensuring it is evenly coated with the oil and tinapa mixture.
  5. Add soy sauce and calamansi juice, mixing thoroughly.
  6. Season with salt and pepper as needed.
  7. Garnish with chopped spring onions before serving hot.

  • calamansi juice -> lime juice
  • jasmine rice -> basmati rice
