Timbuche, a traditional Peruvian soup, is a hearty dish that has its roots in the Amazon region. Fish is the star of this dish, often catfish or a similar freshwater variety, which is cooked with a blend of herbs and spices typical to Peruvian cuisine. What makes Timbuche distinctive is the use of culantro, an herb that imbues the soup with a rich, earthy fragrance. This soup not only nourishes but captures the essence of Peruvian forest flavors, making it a comforting meal steeped in tradition.

Ingredients

  • catfish fillets – 500 g / 1.1 lbs
  • water – 4 cups / 960 ml
  • culantro leaves – 50 g / 1.75 oz
  • yellow potatoes – 200 g / 7 oz
  • onion – 1 medium, chopped
  • garlic cloves – 3, minced
  • aji amarillo paste – 2 tbsp
  • vegetable oil – 2 tbsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and aji amarillo paste, cooking until fragrant, about 2 minutes.
  4. Pour in the water and bring to a boil.
  5. Add the catfish fillets and cook for about 10 minutes.
  6. Add the potatoes and culantro leaves.
  7. Simmer until the potatoes are tender, about 20 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve hot, ensuring each bowl gets a generous amount of fish, potatoes, and broth.
