Ingredients
- mussels – 2 lbs / 900 g
- arborio rice – 1 cup / 210 g
- potatoes – 3 medium-sized, sliced thinly
- tomatoes – 3 large, sliced
- onion – 1 large, thinly sliced
- garlic cloves – 4, minced
- olive oil – 1/4 cup / 60 ml
- parsley – 1/4 cup / 15 g, chopped
- parmesan cheese – 1/2 cup / 50 g, grated
- bread crumbs – 1/4 cup / 30 g
- salt – to taste
- black pepper – to taste
- vegetable broth – 2 cups / 480 ml
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mussels by scrubbing the shells and removing beards, discarding any open ones.
- Lightly oil a baking dish and layer half the potatoes on the bottom.
- Top with half the tomatoes, onions, garlic, parsley, salt, and black pepper.
- Spread the rice evenly over the vegetables, followed by the mussels.
- Add the remaining potatoes, tomatoes, onions, garlic, and parsley.
- Drizzle with olive oil and pour the vegetable broth evenly into the dish.
- Sprinkle with parmesan and bread crumbs over the top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and the mussels have opened.
- Serve hot, garnished with fresh parsley.
