Ingredients
- Beef chuck – 2 lbs / 900 g
- Vegetable oil – 1/4 cup / 60 ml
- Large onions, chopped – 2
- Garlic cloves, minced – 4
- Tomato paste – 3 tbsp / 50 g
- Fresh tomatoes, diced – 3
- Carrots, sliced – 2
- Potatoes, cubed – 3 medium
- Red bell pepper, chopped – 1
- Water – 4 cups / 960 ml
- Salt – to taste
- Black pepper – to taste
- Bay leaves – 2
- West African curry powder – 2 tsp / 5 g
- Fresh parsley, chopped – 1/4 cup / 15 g
Instructions
- Heat the vegetable oil in a large pot over medium-high heat. Add the beef chunks and brown on all sides.
- Remove the beef and set aside. In the same pot, sauté the onions until translucent, then add garlic and cook for another minute.
- Stir in the tomato paste and cook for a couple of minutes until it deepens in color.
- Add the fresh tomatoes, carrots, potatoes, and red bell pepper. Return the beef to the pot.
- Pour in water and season with bay leaves, salt, pepper, and curry powder.
- Bring to a boil, reduce heat to low, and let simmer for about 1.5 hours or until the meat is tender and the vegetables are cooked through.
- Sprinkle fresh parsley before serving with rice or bread.
