Ingredients

  • Beef chuck – 2 lbs / 900 g
  • Vegetable oil – 1/4 cup / 60 ml
  • Large onions, chopped – 2
  • Garlic cloves, minced – 4
  • Tomato paste – 3 tbsp / 50 g
  • Fresh tomatoes, diced – 3
  • Carrots, sliced – 2
  • Potatoes, cubed – 3 medium
  • Red bell pepper, chopped – 1
  • Water – 4 cups / 960 ml
  • Salt – to taste
  • Black pepper – to taste
  • Bay leaves – 2
  • West African curry powder – 2 tsp / 5 g
  • Fresh parsley, chopped – 1/4 cup / 15 g

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat. Add the beef chunks and brown on all sides.
  2. Remove the beef and set aside. In the same pot, sauté the onions until translucent, then add garlic and cook for another minute.
  3. Stir in the tomato paste and cook for a couple of minutes until it deepens in color.
  4. Add the fresh tomatoes, carrots, potatoes, and red bell pepper. Return the beef to the pot.
  5. Pour in water and season with bay leaves, salt, pepper, and curry powder.
  6. Bring to a boil, reduce heat to low, and let simmer for about 1.5 hours or until the meat is tender and the vegetables are cooked through.
  7. Sprinkle fresh parsley before serving with rice or bread.
