This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Tequeños are a beloved Venezuelan snack, adored for their simplicity and unbeatable taste. Originating from the coastal city of Los Teques, this traditional cheese stick involves wrapping queso blanco, a salty white cheese, in a slightly sweet dough and frying until golden brown. The crispy exterior and gooey, melted cheese interior create a delightful contrast that has made Tequeños a staple at parties and gatherings throughout Venezuela.

Ingredients

  • all-purpose flour – 2 cups / 240 g
  • unsalted butter – 4 tablespoons / 56 g
  • egg – 1 large
  • water – 1/4 cup / 60 ml
  • salt – 1 teaspoon
  • sugar – 1 tablespoon
  • queso blanco (white cheese) – 12 sticks / 120 g
  • vegetable oil – for frying

Instructions

  1. In a large mixing bowl, combine the flour, salt, and sugar.
  2. Cut the butter into small pieces and mix into the flour until it resembles coarse crumbs.
  3. Add the egg and mix. Gradually add water until the dough comes together but isn’t sticky. Knead for 5 minutes until smooth.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Roll out the dough to 1/8-inch thickness and cut into strips about 1 inch wide and 6 inches long.
  6. Wrap each cheese stick with a strip of dough, sealing the ends and ensuring there are no openings.
  7. In a deep pan, heat the vegetable oil over medium heat until hot. Fry the tequeños until golden brown, about 2-3 minutes per side.
  8. Drain on a paper towel and serve warm.

Substitutions

  • queso blanco -> mozzarella sticks
  • unsalted butter -> margarine
