Ingredients
- all-purpose flour – 2 cups / 240 g
- unsalted butter – 1 cup / 225 g, chilled and cubed
- whole milk – 3/4 cup / 180 ml, warm
- active dry yeast – 1 packet / 7 g
- granulated sugar – 2 tablespoons / 25 g
- salt – 1 teaspoon / 5 g
- poppy seeds – 4 tablespoons / 35 g
- egg – 1, beaten (for egg wash)
Instructions
- In a bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour, sugar, and salt. Gradually add the yeast mixture and knead until a soft dough forms.
- Roll out the dough on a floured surface. Place the chilled butter on top, fold, and roll out again. Repeat this folding and rolling process 3-4 times to create layers.
- Once dough is layered, roll out to about 1/4-inch thickness, cut into rectangles.
- Brush rectangles with egg wash and sprinkle generously with poppy seeds.
- Place on a baking sheet lined with parchment paper. Let them rise in a warm place for about 30-40 minutes.
- Preheat the oven to 400°F (200°C).
- Bake the tebirkes for 15-20 minutes until golden brown. Allow to cool slightly before serving.
