The traditional Saudi Arabian dish, Taḥt al-qadir, is a rich and flavorful rice dish, often enjoyed at large family gatherings and celebrations. It translates to ‘under the pot,’ signifying the slow-cooked nature of this meal where chicken or meat is lovingly layered with rice, spices, and vegetables. Ingredients

  • Chicken pieces – 1 kg / 2.2 lbs
  • Basmati rice – 2 cups / 400 g
  • Onion – 1 large, sliced
  • Garlic cloves – 4, minced
  • Tomatoes – 2 large, chopped
  • Green bell pepper – 1, chopped
  • Carrot – 1, sliced
  • Potatoes – 2 medium, sliced
  • Ground cumin – 1 tsp
  • Ground coriander – 1 tsp
  • Turmeric powder – 1 tsp
  • Salt – 2 tsp
  • Black pepper – 1 tsp
  • Cinnamon stick – 1
  • Bay leaves – 2
  • Chicken broth – 4 cups / 960 ml
  • Olive oil – 4 tbsp
  • Lemon zest – 1 tbsp

Instructions

  1. Rinse and soak the basmati rice in water for 30 minutes.
  2. In a large pot, heat olive oil over medium heat and sauté onions until golden.
  3. Add the garlic, cumin, coriander, turmeric, salt, black pepper, and chicken pieces. Cook until the chicken is browned on all sides.
  4. Stir in tomatoes, bell pepper, carrot, potatoes, cinnamon stick, and bay leaves. Cook for an additional 5 minutes.
  5. Add chicken broth and lemon zest, bring to a boil.
  6. Drain the rice and layer it over the chicken and vegetables, do not stir.
  7. Reduce heat to low, cover the pot, and let it simmer for about 30-40 minutes until the rice is cooked and has absorbed the liquid.
  8. Fluff the rice before serving and garnish with fresh herbs if desired.

Substitutions

  • Chicken -> Lamb or beef chunks
  • Basmati rice -> Long-grain white rice
  • Olive oil -> Ghee or vegetable oil
