Ingredients
- chicken pieces – 1.5 kg / 3.3 lbs
- soy sauce – 1/2 cup / 120 ml
- vinegar – 1/2 cup / 120 ml
- medium onions, sliced – 2
- garlic cloves, minced – 5
- tomatoes, diced – 3
- bay leaves – 3
- black peppercorns – 1 tsp / 5 g
- cooking oil – 2 tbsp / 30 ml
- water – 2 cups / 480 ml
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Sauté the onions and garlic until the onions are translucent.
- Add the chicken pieces and brown them slightly on all sides.
- Stir in the tomatoes and cook until they begin to soften.
- Pour in the soy sauce and vinegar, stirring to combine.
- Add the bay leaves and peppercorns, then pour in the water.
- Bring the stew to a boil, then reduce heat to low and cover.
- Simmer for 1 hour, until the chicken is tender and flavors meld.
- Adjust seasoning with salt and additional soy sauce, if needed.
