Tajin mahshi – Classic

Tajin Mahshi is a celebrated Libyan dish known for its aromatic richness and comforting warmth. Traditionally enjoyed during gatherings and special occasions, this dish exemplifies the beauty of Middle Eastern culinary art with its harmonious blend of spices and fresh ingredients. The name ‘mahshi’ hints at its core technique—stuffing vegetables and sometimes meats with a flavorful blend of rice, herbs, and spices, then slow-cooking them to perfection.
Ingredients
- Zucchini – 4 large / 600 g
- Bell peppers – 3 medium / 450 g
- Ground beef – 500 g / 1 lb
- Rice – 150 g / 1 cup
- Onion – 1 large, chopped / 150 g
- Garlic cloves – 4, minced
- Tomato paste – 60 g / 4 tbsp
- Olive oil – 60 ml / 1/4 cup
- Salt – 1 1/2 tsp
- Black pepper – 1 tsp
- Ground cinnamon – 1/2 tsp
- Ground cumin – 1 tsp
- Chopped parsley – 30 g / 1 cup
- Chicken broth – 500 ml / 2 cups
Instructions
- Preheat oven to 180°C (350°F).
- Cut the tops off the zucchinis and bell peppers, and hollow out the insides using a small spoon, keeping an inch of the base intact.
- In a large bowl, combine the ground beef, rice, onion, half of the minced garlic, tomato paste, olive oil, salt, pepper, cinnamon, cumin, and chopped parsley until well mixed.
- Stuff the zucchini and bell peppers with the beef and rice mixture, leaving a little space at the top to allow rice to expand.
- Arrange the stuffed vegetables in a large, oven-proof dish.
- Mix chicken broth with remaining garlic and pour evenly over the stuffed vegetables.
- Cover with foil and bake for 1 hour or until vegetables are tender and rice is cooked.
- Remove foil for the last 15 minutes of baking to allow the tops to brown slightly.
- Let rest for 5 minutes before serving.

- Chicken broth -> Vegetable broth for a vegetarian option.
- Rice -> Quinoa to enhance nutrient diversity.
