Ingredients

  • 00 flour – 2 cups / 240 g
  • large eggs – 4
  • unsalted butter – 1/2 cup / 113 g
  • Parmesan cheese – 1/2 cup grated / 50 g
  • salt – to taste

Instructions

  1. Pour the flour onto a clean surface, creating a mound with a well in the center.
  2. Crack the eggs into the well, then gently beat them with a fork, gradually incorporating the flour until dough forms.
  3. Knead the dough for about 10 minutes, until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
  4. Roll out the dough using a pasta machine to a thin sheet, then cut into narrow ribbons about 1/8 inch wide.
  5. Cook the pasta in a large pot of salted boiling water for about 2 minutes, until just tender.
  6. In a large skillet, melt the butter over low heat, adding a small ladle of pasta cooking water to create a silky sauce.
  7. Drain the pasta, reserving some cooking water, and add it to the skillet. Toss with the butter sauce, adding grated Parmesan cheese and a pinch of salt.
  8. Serve immediately, garnished with extra Parmesan cheese if desired.
