Tagine Sauce – Classic

Tagine sauce is the heart and soul of Moroccan cuisine, infusing dishes with an aromatic mix of spices and herbs that date back centuries. Originating in the vibrant markets of Marrakesh and Fez, this sauce is traditionally slow-cooked in a clay pot called a ‘tagine’, which lends the sauce its name. With layers of flavors, this sauce encapsulates the warmth of cinnamon, cumin, and coriander balanced with the subtle sweetness of dried fruits.

Ingredients

  • olive oil – 2 tbsp / 30 ml
  • onion, finely chopped – 1 large / 150 g
  • garlic cloves, minced – 3 cloves / 15 g
  • ground cumin – 1 tsp / 2 g
  • ground coriander – 1 tsp / 2 g
  • ground cinnamon – 1/2 tsp / 1 g
  • ground ginger – 1/2 tsp / 1 g
  • tomato paste – 2 tbsp / 30 g
  • vegetable broth – 2 cups / 480 ml
  • dried apricots, chopped – 1/4 cup / 40 g
  • honey – 1 tbsp / 21 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 1.5 g
  • fresh parsley, chopped – 2 tbsp / 8 g

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in the garlic, cumin, coriander, cinnamon, and ginger. Cook for 1 minute until fragrant.
  4. Add the tomato paste and mix well.
  5. Pour in vegetable broth, stirring to combine.
  6. Add the dried apricots and honey. Bring to a simmer.
  7. Reduce the heat to low, cover, and let simmer for 20 minutes.
  8. Season with salt and black pepper.
  9. Garnish with fresh parsley before serving.
