Tacos de gaonera are a traditional Mexican delight, deeply rooted in the rich culinary heritage of Mexico. Originating from the bustling streets of Mexico City, ‘gaonera’ refers to flank steak, a prized cut for its rich flavor and tenderness when properly prepared. These tacos combine the savory goodness of marinated flank steak with the freshness of vibrant toppings, all nestled in a soft corn tortilla. Each bite offers a symphony of flavors that are both comforting and exhilarating, making it a beloved favorite among taco enthusiasts.

Ingredients

  • flank steak – 1 lb / 450 g
  • lime juice – 1/4 cup / 60 ml
  • orange juice – 1/4 cup / 60 ml
  • olive oil – 2 tbsp / 30 ml
  • garlic cloves, minced – 3 cloves
  • ground cumin – 1 tsp / 5 g
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2.5 g
  • corn tortillas – 8 pieces
  • fresh cilantro, chopped – 1/4 cup / 15 g
  • white onion, chopped – 1/2 cup / 75 g
  • salsa of choice – 1/2 cup / 120 ml
  • avocado, sliced – 1 large

Instructions

  1. In a mixing bowl, combine lime juice, orange juice, olive oil, minced garlic, ground cumin, salt, and black pepper. Whisk to blend.
  2. Place the flank steak in a resealable plastic bag and pour the marinade over the steak. Seal the bag, making sure the steak is well-coated, and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat a grill or skillet over high heat. Remove the steak from the marinade and pat dry with paper towels.
  4. Grill the steak for about 5-6 minutes per side, or until the desired degree of doneness is reached. Let it rest for 5 minutes before slicing thinly against the grain.
  5. Warm the corn tortillas on a dry skillet or directly on the grill until pliable.
  6. Assemble the tacos by placing slices of steak in each tortilla, then top with chopped cilantro, onion, salsa, and avocado slices.
  7. Serve immediately and enjoy the vibrant flavors.

Substitutions

  • flank steak -> skirt steak

  • Marinate the steak with additional spices such as smoked paprika or chipotle powder for a smoky flavor.
