Ingredients

- Dried ancho chilies, stemmed and seeded – 2 pieces
- White vinegar – 1/2 cup / 120 ml
- Garlic cloves – 4 cloves
- Oregano – 1 tsp
- Cumin – 1 tsp
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Pineapple juice – 1/2 cup / 120 ml
- Corn tortillas – 8 tortillas
- Lime wedges – For serving
- Chopped onion and cilantro – For garnish
Instructions
- Soak guajillo and ancho chilies in hot water for 15 minutes until soft.
- Blend the chilies with vinegar, garlic, oregano, cumin, salt, black pepper, and pineapple juice until smooth.
- Slice the pork shoulder into thin strips and marinate with the blended sauce for at least 2 hours, or overnight for better flavor.
- Preheat a grill or skillet over medium-high heat and cook the marinated pork until fully cooked and slightly crispy.
- Warm the corn tortillas on a skillet.
- Assemble the tacos by placing cooked pork into the tortillas and garnishing with onion, cilantro, and lime.
