Ingredients
- bulgur wheat – 1/2 cup / 90 g
- hot water – 1 cup / 240 ml
- fresh parsley – 2 cups / 100 g, finely chopped
- fresh mint leaves – 1/2 cup / 25 g, finely chopped
- ripe tomatoes – 2 medium / 200 g, diced
- cucumber – 1 medium / 150 g, diced
- green onions – 3, finely sliced
- lemon juice – 1/4 cup / 60 ml
- extra virgin olive oil – 1/4 cup / 60 ml
- salt – 1/2 tsp
- black pepper – 1/4 tsp
Instructions
- Rinse the bulgur wheat under cold water and then soak it in hot water for 15 minutes until soft. Drain any excess water.
- In a large bowl, combine the chopped parsley, mint, tomatoes, cucumber, and green onions.
- Add the soaked bulgur to the vegetable mixture.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss everything together until well combined.
- Let the tabouleh sit for at least 30 minutes before serving to allow the flavors to meld.
