Ingredients
- tvorog (or farmer’s cheese) – 500 g / 2 cups
- eggs – 2 large
- all-purpose flour – 100 g / ¾ cup, plus more for dusting
- sugar – 50 g / ¼ cup
- vanilla extract – 1 tsp
- salt – ¼ tsp
- baking powder – ½ tsp
- vegetable oil – for frying
Instructions
- In a large bowl, combine the tvorog, eggs, sugar, vanilla extract, and salt. Mix until smooth.
- Sift in the flour and baking powder, and mix until just combined. Avoid over-mixing to prevent toughness.
- Dust a clean surface with flour and shape the cheese mixture into a log. Cut into 12 equal pieces.
- Form each piece into a small patty, dusting with extra flour as needed to prevent sticking.
- Heat vegetable oil in a non-stick skillet over medium heat.
- Fry the syrniki in batches for about 3-4 minutes on each side or until golden brown and cooked through.
- Drain on paper towels and serve warm with sour cream, honey, or fruit preserves.
