Ingredients
- goose blood – 500 ml / 2 cups
- chicken stock – 500 ml / 2 cups
- all-purpose flour – 60 g / 1/2 cup
- butter – 100 g / 7 tbsp
- onion, finely chopped – 1 large
- sugar – 50 g / 1/4 cup
- apple, peeled and diced – 1 medium
- apple cider vinegar – 50 ml / 1/4 cup
- ground allspice – 1 tsp
- ground cloves – 1/2 tsp
- ground white pepper – 1/2 tsp
- port wine – 100 ml / 1/2 cup
- cream – 100 ml / 1/2 cup
Instructions
- Melt butter in a large pot over medium heat. Add the finely chopped onion and cook until softened.
- Stir in the flour, cooking and stirring continuously to form a roux.
- Gradually add the chicken stock while stirring to ensure a smooth mixture.
- Add the apple, sugar, vinegar, and spices, simmering gently for about 10 minutes.
- Slowly add the goose blood, stirring constantly until fully incorporated.
- Mix in the port wine, continuing to simmer gently for another 15 minutes.
- Finish with cream, cooking just until heated through. Do not allow the soup to boil after adding the cream.
- Serve hot, preferably with warm bread.
