Svadbarski kupus – Classic

Svadbarski Kupus, or ‘Wedding Cabbage’, is a traditional Serbian stew often featured at weddings and festive gatherings. Rich in history, its preparation is a communal event where families gather to celebrate unity and togetherness. The stew, often slow-cooked in a clay pot, brings out the robust flavors of fermented cabbage combined with various meats and spices, embodying the heartwarming essence of Serbian cuisine.

Ingredients

  • sauerkraut – 2 kg / 4.4 lbs
  • pork shoulder – 1 kg / 2.2 lbs
  • smoked bacon – 300 g / 10.5 oz
  • beef stew meat – 500 g / 1.1 lbs
  • onion – 2 large, chopped
  • garlic cloves – 4, minced
  • bay leaves – 2
  • paprika – 2 tbsp
  • black pepper – 1 tsp
  • vegetable stock – 1 L / 33.8 fl oz
  • lard or vegetable oil – 3 tbsp
  • salt – to taste

Instructions

  1. Heat the lard or oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Add minced garlic and continue to sauté for another minute.
  3. Increase the heat and add pork shoulder and beef. Brown the meats on all sides.
  4. Stir in the paprika, mixing well to coat the meat.
  5. Add the chopped bacon and continue to cook to render some of the fat.
  6. Place the sauerkraut in the pot, stirring to combine with the meat mixture.
  7. Add bay leaves and black pepper, then pour in the vegetable stock to cover the mixture.
  8. Bring to a gentle simmer, reduce heat to low, cover, and let cook for 2-3 hours until the meat is tender.
  9. Check for seasoning and add salt as needed prior to serving.

  • beef stew meat -> lamb pieces
  • sauerkraut -> fresh cabbage with vinegar
