Suya, an exotic street food originating from Northern Nigeria, is a spicy meat skewer delight that’s incredibly popular across West Africa. It’s traditionally made using thinly sliced beef or chicken, marinated in a spice mix called ‘Yaji’, which is a complex blend of ground peanuts, cayenne pepper, ginger, and other spices. The skewered meat is then grilled to perfection, resulting in flavorful, juicy bites with a slightly charred exterior. Suya embodies communal eating and is often enjoyed in lively social gatherings, accompanied by fresh diced onions and tomatoes.

Ingredients

  • Beef sirloin – 1 kg / 2.2 lb, thinly sliced
  • Ground peanuts – 1 cup / 135 g
  • Cayenne pepper – 1 tbsp / 15 g
  • Paprika – 1 tbsp / 15 g
  • Ground ginger – 1 tsp / 5 g
  • Garlic powder – 1 tsp / 5 g
  • Salt – 1 tsp / 5 g
  • Ground white pepper – 1/2 tsp / 2.5 g
  • Onion powder – 1/2 tsp / 2.5 g
  • Olive oil – 2 tbsp / 30 ml
  • Wooden skewers – as needed

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a bowl, combine ground peanuts, cayenne pepper, paprika, ground ginger, garlic powder, salt, white pepper, and onion powder to create the Yaji spice mix.
  3. Add olive oil to the spice mix, forming a thick paste.
  4. Coat the beef slices evenly with the spice paste, ensuring each piece is well covered.
  5. Thread the spiced beef onto soaked skewers.
  6. Preheat the grill to medium-high heat.
  7. Grill skewered meat for 4-5 minutes on each side or until the meat is cooked through and slightly charred.
  8. Serve hot with diced onions and tomatoes on the side.
