Ingredients

  • ground beef – 400 g / 14 oz
  • rice – 50 g / 1/4 cup
  • onion, finely chopped – 1 medium / 150 g
  • carrots, diced – 2 medium / 120 g
  • potatoes, diced – 2 medium / 300 g
  • celery, diced – 1 stalk / 70 g
  • egg – 1 large
  • all-purpose flour – 30 g / 1/4 cup
  • vegetable oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste
  • paprika – 1 tsp
  • parsley, chopped – handful / 15 g
  • beef or chicken broth – 1.5 liters / 6 cups

Instructions

  1. In a bowl, mix ground beef, rice, half of the chopped onion, the egg, salt, and black pepper to taste. Form small meatballs.
  2. In a pot, heat oil and sauté the remaining onion, carrots, celery, and potatoes until softened.
  3. Add paprika and stir briefly to release its aroma.
  4. Add broth and bring to a boil. Gently place meatballs into the boiling broth.
  5. Lower the heat and simmer for 20-30 minutes until meatballs are cooked through and vegetables are tender.
  6. In a small bowl, whisk the flour with a little cold water to make a paste. Stir it into the soup to thicken slightly.
  7. Adjust seasoning with additional salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley.
