Ingredients

  • Pork shoulder – 1 kg / 2.2 lbs, cubed
  • Red chili powder – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Ginger – 1 tbsp, minced
  • Garlic – 1 tbsp, minced
  • Salt – 1 tsp
  • Mustard oil – 2 tbsp
  • Bamboo tubes – 4 sections
  • Banana leaves – As needed, for wrapping
  • Coriander leaves – For garnish

Instructions

  1. In a large bowl, combine pork cubes with red chili powder, turmeric, ginger, garlic, salt, and mustard oil. Mix thoroughly.
  2. Wrap the marinated pork in banana leaves and then stuff into the bamboo tubes, covering the ends securely.
  3. Place the bamboo tubes over an open flame or charcoal grill, turning occasionally to cook evenly for about 40-50 minutes.
  4. Once cooked, carefully remove the pork from the bamboo tubes and unwrap from banana leaves.
  5. Garnish with coriander leaves before serving.
