Ingredients

  • ground beef or lamb – 500 g / 1.1 lbs
  • rice – 100 g / 0.5 cup
  • onion – 1 medium, finely chopped
  • garlic – 2 cloves, minced
  • egg – 1 large
  • parsley – 2 tbsp, finely chopped
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • olive oil – 2 tbsp
  • water or beef broth – 1.5 liters / 6 cups
  • tomato paste – 2 tbsp
  • carrot – 1 large, diced
  • potato – 1 large, diced

Instructions

  1. In a bowl, combine ground meat, rice, onion, garlic, egg, parsley, salt, and black pepper. Mix well to combine.
  2. Form mixture into small meatballs about the size of a walnut.
  3. Heat olive oil in a large pot over medium heat. Add the meatballs and brown on all sides for about 5 minutes.
  4. Add water or beef broth, tomato paste, carrot, and potato to the pot. Stir gently to combine.
  5. Bring stew to a boil, then reduce heat to low and cover. Simmer for 30 minutes or until vegetables are tender.
  6. Adjust seasoning if necessary and serve hot.
