Ingredients

- Celery – 1 stalk, diced

- White wine – 240 ml / 1 cup
- Salt – to taste
- Black pepper – to taste
- Bay leaves – 2
- Pasta (e.g., rigatoni) – 500 g / 1.1 lbs
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced carrot and celery, sautéing until they begin to soften.
- Add the onions, and cook gently for up to 30 minutes, stirring frequently, until they turn golden and caramelize.
- Add the beef, season with salt and pepper, and sear until browned on all sides.
- Pour in the white wine, scraping up any browned bits, and allow it to reduce by half.
- Add the bay leaves and reduce heat to low. Simmer gently, occasionally stirring, for about 2-3 hours until the sauce thickens and the beef is very tender.
- Cook pasta according to package instructions, then serve with the sauce, removing the bay leaves before serving.
