- fresh fish fillets – 500 g / 1.1 lbs

- fish stock – 1 liter / 4 cups
- taro or potatoes – 300 g / 10.5 oz, cubed
- spring onions – 2, chopped
- lemon or lime – 1, juiced
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, heat a tablespoon of oil over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant and the onion is translucent.
- Pour in the fish stock and bring to a simmer. Add the cubed taro or potatoes and cook until tender, about 15 minutes.
- Add the coconut milk and stir to combine, then carefully place the fish fillets in the soup.
- Cook the fish gently in the simmering soup for about 10 minutes or until the fish is cooked through and flakes easily.
- Season with salt, black pepper, and the juice of the lemon or lime to taste.
