Ingredients
- octopus – 600 g / 1.3 lbs
- gochujang (Korean chili paste) – 3 tbsp / 45 g
- soy sauce – 2 tbsp / 30 ml
- sesame oil – 1 tbsp / 15 ml
- sugar – 1 tbsp / 12 g
- minced garlic – 4 cloves / 12 g
- green onions – 2, sliced / 60 g
- onion – 1, sliced / 100 g
- carrot – 1, julienned / 80 g
- red bell pepper – 1, sliced / 120 g
- cooked white rice – 4 cups / 800 g
Instructions
- 1. Prepare the octopus by cleaning it thoroughly under cold water, removing the beak and eyes, and slicing it into bite-sized pieces.
- 2. In a bowl, mix gochujang, soy sauce, sesame oil, sugar, and minced garlic to create the marinade.
- 3. Add the octopus pieces to the marinade and coat evenly. Let it marinate for at least 30 minutes in the refrigerator.
- 4. Heat a large pan over medium-high heat and add a small amount of oil. Stir-fry the sliced onion, carrot, red bell pepper, and green onions for 3-4 minutes until they begin to soften.
- 5. Add the marinated octopus to the pan and stir-fry for another 4-5 minutes until fully cooked.
- 6. Serve immediately over bowls of cooked white rice.
