Ingredients

  • white fish fillets – 600 g / 1.3 lbs
  • coconut milk – 400 ml / 13.5 oz
  • Kaffir lime leaves – 4 leaves, finely sliced
  • egg – 1 large
  • kroeung (Cambodian spice paste) – 4 tablespoons
  • fish sauce – 2 tablespoons
  • sugar – 2 teaspoons
  • salt – 1 teaspoon
  • banana leaves – as needed for wrapping
  • rice – to serve, 2 cups uncooked

Instructions

  1. 1. Cut the fish fillets into small pieces and set aside.
  2. 2. In a bowl, whisk together coconut milk, egg, kroeung, fish sauce, sugar, and salt until well combined.
  3. 3. Gently fold the fish pieces and Kaffir lime leaves into the coconut milk mixture.
  4. 4. Cut banana leaves into squares and shape them into bowls by folding the edges up.
  5. 5. Spoon the fish mixture into the banana leaf bowls and place them in a steamer.
  6. 6. Steam over boiling water for 20-25 minutes or until the fish is cooked through and the mixture is firm.
  7. 7. Serve hot over cooked rice.
