Ingredients

  • boneless chicken thighs – 1 lb / 450 g
  • cornstarch – 1 cup / 120 g
  • soy sauce – 1/4 cup / 60 ml
  • eggs – 2, beaten
  • vegetable oil – for frying
  • unsalted cashews – 1 cup / 150 g
  • green onions – 4, chopped
  • oyster sauce – 1/4 cup / 60 ml
  • chicken broth – 1/2 cup / 120 ml
  • sugar – 1 tbsp / 15 g
  • cornstarch – 1 tbsp / 8 g
  • water – 2 tbsp / 30 ml

Instructions

  1. Cut the chicken thighs into bite-sized pieces and toss them in soy sauce. Let marinate for 15 minutes.
  2. Coat the marinated chicken pieces in beaten eggs, then dredge in cornstarch.
  3. Heat the vegetable oil in a deep skillet or wok over medium-high heat. Fry the chicken pieces until golden brown and cooked through. Remove and drain on paper towels.
  4. In a small bowl, mix the oyster sauce, chicken broth, sugar, cornstarch, and water for the sauce.
  5. In a clean skillet, heat a little oil and sauté the cashews and green onions for 2 minutes.
  6. Pour the sauce into the skillet and bring to a simmer until thickened.
  7. Add the fried chicken pieces back to the skillet, tossing to coat them well with the sauce.
  8. Serve immediately with steamed rice, garnished with additional green onions.
