Instructions
- 1. Rub the pigeons inside and out with a mixture of olive oil, lemon juice, minced garlic, rosemary, sage, salt, and pepper.
- 2. Let the seasoned pigeons marinate for at least 1 hour, preferably in the refrigerator to allow the flavors to penetrate.
- 3. Prepare a spit or rotisserie and set the heat source, either charcoal or a grill, to medium-high heat.
- 4. Secure the pigeons on the spit rod, making sure they are evenly balanced.
- 5. Roast the pigeons over the heat for about 45 minutes, basting occasionally with olive oil, until the skin is crispy and browned and the internal temperature reads 165°F (74°C).
