Ingredients
- Pork shoulder – 1 kg / 35 oz
- Chicken thighs – 600 g / 21 oz
- Rabbit – 500 g / 18 oz
- Lard – 150 g / 5 oz
- Butter – 100 g / 3.5 oz
- Sage leaves – 12 leaves
- White wine – 250 ml / 1 cup
- Salt – to taste
- Black pepper – to taste
Instructions
- Preheat a barbecue with a rotisserie function.
- Cut the pork shoulder, chicken thighs, and rabbit into equal-sized pieces.
- Thread the pieces of meat onto skewers, alternating between types.
- Insert sage leaves intermittently between the meat pieces.
- Melt butter and lard in a small saucepan over low heat.
- Baste the meat with melted butter and lard, and season with salt and pepper.
- Place the skewers on the rotisserie and start roasting.
- Baste with melted butter mixture every 15 minutes.
- After 1 hour, drizzle with white wine and continue cooking for another 1.5 hours, basting intermittently.
- The meat should be golden brown and cooked through.
- Remove from rotisserie, allow to rest for 10 minutes, then serve.
