Ingredients

  • Pork shoulder – 1 kg / 35 oz
  • Chicken thighs – 600 g / 21 oz
  • Rabbit – 500 g / 18 oz
  • Lard – 150 g / 5 oz
  • Butter – 100 g / 3.5 oz
  • Sage leaves – 12 leaves
  • White wine – 250 ml / 1 cup
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Preheat a barbecue with a rotisserie function.
  2. Cut the pork shoulder, chicken thighs, and rabbit into equal-sized pieces.
  3. Thread the pieces of meat onto skewers, alternating between types.
  4. Insert sage leaves intermittently between the meat pieces.
  5. Melt butter and lard in a small saucepan over low heat.
  6. Baste the meat with melted butter and lard, and season with salt and pepper.
  7. Place the skewers on the rotisserie and start roasting.
  8. Baste with melted butter mixture every 15 minutes.
  9. After 1 hour, drizzle with white wine and continue cooking for another 1.5 hours, basting intermittently.
  10. The meat should be golden brown and cooked through.
  11. Remove from rotisserie, allow to rest for 10 minutes, then serve.
