Instructions
- Cut the beef chuck into 1-inch cubes and season with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Brown the beef cubes in batches, removing them once browned.
- In the same pot, add chopped onion, carrot, and celery, sautéing until soft, about 5 minutes.
