Ingredients

  • beef sirloin – 1 lb / 450 g, thinly sliced
  • rice vermicelli noodles – 14 oz / 400 g

  • cucumber, julienned – 1
  • carrot, julienned – 1
  • fresh mint leaves – 1/2 cup / 20 g
  • fresh basil leaves – 1/2 cup / 20 g
  • peanuts, toasted and chopped – 1/4 cup / 30 g
  • scallions, sliced – 3
  • garlic, minced – 3 cloves
  • fish sauce – 1/4 cup / 60 ml
  • lime juice – 3 tbsp / 45 ml
  • sugar – 2 tbsp / 25 g
  • vegetable oil – 2 tbsp / 30 ml
  • salt – 1/2 tsp / 3 g
  • black pepper – 1/4 tsp / 1 g
  • red chili, thinly sliced – 1

Instructions

  1. In a bowl, marinate the beef slices with minced garlic, fish sauce, 1 tbsp of lime juice, sugar, and a pinch of salt and pepper. Let it sit for at least 30 minutes.
  2. Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.
  3. In a large frying pan, heat vegetable oil over medium-high heat. Stir-fry the marinated beef for 3-4 minutes until just cooked.
  4. In a small bowl, mix the remaining lime juice with fish sauce, sugar, and a bit of water to create the dressing.
  5. In a large bowl or individual serving bowls, assemble the noodles, lettuce, bean sprouts, cucumber, carrot, mint, and basil.
