Ingredients
- large shrimp, peeled and deveined – 1 lb / 450 g

- unsalted butter – 4 tbsp / 56 g
- olive oil – 2 tbsp
- yellow grits – 1 cup / 160 g
- water – 4 cups / 960 ml
- heavy cream – 1/2 cup / 120 ml
- sharp cheddar cheese, shredded – 1 cup / 100 g
- bacon, chopped – 4 slices
- garlic, minced – 2 cloves
- green onions, sliced – 3
Instructions
- In a medium pot, bring water to a boil. Add grits slowly while stirring. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
- Stir in heavy cream and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
- Season the shrimp with salt, black pepper, cayenne, and lemon juice. Set aside.
- In a large skillet over medium heat, cook bacon until crisp. Remove bacon, leaving drippings.
- Add shrimp to the skillet, cooking for 2-3 minutes per side until pink. Remove shrimp.
- Add butter and olive oil to the skillet, then sauté garlic and green onions for 1 minute. Return shrimp and bacon to the skillet to combine.
- Serve shrimp mixture over the grits, topped with additional green onions.
