Southern Fried Crappie is a beloved dish from the southern United States, where fishing is not just a pastime but a way of life. This dish embodies the simplicity and charm of Southern cooking, utilizing the delicate, flaky texture of crappie fish, caught fresh from local lakes. The crappie is coated in a seasoned cornmeal crust, bringing a delightful crunch to every bite, and is deep-fried to golden perfection. The dish reflects the rich culinary tradition of the South, where family gatherings often revolve around beautifully fried fish.

Ingredients

  • crappie fillets – 8 fillets
  • buttermilk – 2 cups / 480 ml
  • cornmeal – 1 cup / 150 g
  • all-purpose flour – 1/2 cup / 60 g
  • paprika – 1 teaspoon / 2 g
  • salt – 1 teaspoon / 6 g
  • black pepper – 1/2 teaspoon / 1 g
  • cayenne pepper – 1/4 teaspoon / 0.5 g
  • vegetable oil – for frying
  • lemon wedges – for serving

Instructions

  1. Rinse the crappie fillets and pat them dry with paper towels.
  2. In a shallow dish, soak the fillets in buttermilk for at least 30 minutes.
  3. In another bowl, mix cornmeal, flour, paprika, salt, black pepper, and cayenne pepper.
  4. Heat vegetable oil in a deep frying pan over medium-high heat until shimmering.
  5. Remove fillets from buttermilk, allowing excess to drip off, and dredge them in the cornmeal mixture, coating well.
  6. Carefully place the coated fillets in the hot oil, frying until golden brown and cooked through, about 3-4 minutes per side.
  7. Remove the fillets and drain them on paper towels to remove excess oil.
  8. Serve hot with lemon wedges on the side.
