Ingredients
- Potatoes – 500 g / 1 lb
- Mustard oil – 2 tbsp
- Cumin seeds – 1 tsp
- Asafoetida (Hing) – a pinch
- Turmeric powder – 1/2 tsp
- Red chili powder – 1/2 tsp
- Coriander powder – 1 tsp
- Amchur (dry mango) powder – 1 tbsp
- Salt – to taste
- Fresh coriander – for garnish
- Water – 1/4 cup / 60 ml
Instructions
- Boil the potatoes until just tender, peel, and cut them into cubes.
- Heat mustard oil in a pan until smoking point to remove bitterness, then cool it slightly.
- Add cumin seeds and allow them to splutter, then add a pinch of asafoetida.
- Mix in turmeric, red chili, and coriander powder, stirring for about 30 seconds.
- Add the potato cubes, salt, and amchur powder, stirring to coat the potatoes evenly with the spices.
- Pour in the water and cook on low heat until the potatoes are well-coated and water is absorbed, about 5 minutes.
- Garnish with fresh coriander and serve hot.
