Ingredients

  • beef trotters – 1 kg / 2.2 lbs
  • water – 2 liters / 8.5 cups
  • lemongrass, crushed – 2 stalks
  • turmeric, grated – 1 tbsp / 15 g
  • ginger, sliced – 2 inches / 5 cm
  • garlic, minced – 6 cloves
  • shallots, sliced – 4 medium
  • coriander powder – 1 tsp / 5 g
  • lime leaves – 4 leaves
  • salt – 2 tsp / 10 g
  • oil – 3 tbsp / 45 ml
  • fried shallots – for garnish
  • rice vermicelli, cooked – 200 g / 7 oz

Instructions

  1. Boil the beef trotters in water until tender, this may take up to 3 hours. Skim off any foam that arises.
  2. In a separate pan, heat oil and sauté minced garlic, shallots, ginger, and turmeric until fragrant.
  3. Add coriander powder, lime leaves, and lemongrass to the pan, stir for an additional minute.
  4. Pour the sautéed mixture into the broth with the beef trotters, season with salt, and simmer for another 30 minutes.
  5. Adjust seasoning as needed and serve hot with cooked rice vermicelli, garnished with fried shallots.
