Ingredients
- Black beans – 1 cup / 200 g
- Coconut milk – 1 cup / 240 ml
- Onion – 1 medium, diced
- Garlic cloves – 3 cloves, minced
- Thyme, fresh – 1 sprig
- Scotch bonnet pepper – 1 small
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Olive oil – 2 tbsp
Instructions
- Rinse the black beans under cold water. Place in a pot with 3 cups of water. Bring to a boil, then simmer until tender, about 1.5 hours.
- In a separate pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant.
- Add the cooked beans and their cooking liquid to the pan with onion and garlic. Stir in the coconut milk, thyme, and Scotch bonnet pepper.
- Season with salt and black pepper. Reduce heat and simmer for another 20 minutes, allowing the flavors to meld together.
- Remove the thyme sprig and Scotch bonnet before serving. Blend half of the mixture for a creamy texture if desired.
