Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced carrots and potatoes to the pot, stir to coat with butter, and cook for another 5 minutes.
- Pour in the beef broth, bringing the mixture to a gentle boil. Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
- Stir in the sorrel leaves and cook until wilted, approximately 2-3 minutes.
- Season the soup with salt and black pepper to taste.
