Ingredients

  • beef broth – 5 cups / 1.2 L
  • sorrel leaves, chopped – 2 cups / 80 g

  • hard-boiled eggs, chopped – 2
  • butter – 2 tbsp / 28 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 2 g
  • sour cream for serving – to taste
  • fresh dill, chopped – 2 tbsp / 8 g

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the diced carrots and potatoes to the pot, stir to coat with butter, and cook for another 5 minutes.
  3. Pour in the beef broth, bringing the mixture to a gentle boil. Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
  4. Stir in the sorrel leaves and cook until wilted, approximately 2-3 minutes.
  5. Season the soup with salt and black pepper to taste.
  6. Add the chopped hard-boiled eggs and fresh dill, stir to combine.
  7. Serve the soup hot, garnished with a dollop of sour cream.
