Ingredients

  • Olive oil – 2 tablespoons / 30 ml
  • Onion – 1 large / 200 g, finely sliced
  • Garlic cloves – 3 cloves / 15 g, minced
  • Carrots – 2 medium / 150 g, julienned
  • Leek – 1 large / 150 g, finely sliced
  • Savoy cabbage – 1/2 small / 200 g, shredded
  • Potatoes – 2 medium / 300 g, diced
  • Salt – 1 teaspoon / 5 g
  • Black pepper – 1/2 teaspoon / 2.5 g
  • Water – 4 cups / 960 ml
  • Bay leaf – 1 leaf

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until translucent.
  2. Stir in the carrots and leeks, cooking for 5 minutes until they begin to soften.
  3. Add the shredded cabbage and diced potatoes, stirring to combine.
  4. Pour in the water, add the bay leaf, and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 30-35 minutes until vegetables are tender.
  6. Remove the bay leaf before serving the soup hot.
