Ingredients

  • Dried pasilla chiles – 2, seeded and sliced
  • Corn tortillas – 6, cut into strips
  • Avocado – 1, diced
  • Crema – 1/2 cup / 120 ml
  • Queso fresco – 1/2 cup / 60 g, crumbled
  • Lime – 1, cut into wedges
  • Salt and pepper – To taste
  • Fresh cilantro leaves – 1/4 cup, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent.
  2. Stir in garlic, tomatoes, and pasilla chiles. Cook until tomatoes break down, about 10 minutes.
  3. Pour in chicken broth, bring to a simmer, and season with salt and pepper.
  4. While broth simmers, fry tortilla strips in olive oil until golden and crispy, then drain on paper towels.
  5. Ladle the soup into bowls and garnish with avocado, crema, queso fresco, cilantro, lime wedges, and tortilla strips.
