Ingredients
- Olive oil – 2 tbsp / 30 ml
- Chicken thighs, skinless – 1 lb / 450 g
- Onion, chopped – 1 large / 200 g
- Garlic, minced – 3 cloves / 15 g
- Carrots, diced – 2 medium / 200 g
- Celery, diced – 2 stalks / 100 g
- Potato, peeled and cubed – 1 large / 300 g
- Chicken stock – 6 cups / 1.4 L
- Vermicelli noodles – 4 oz / 115 g
- Cilantro, chopped – 1/4 cup / 15 g
- Lime, juiced – 1 / 30 ml
- Salt – to taste
- Black pepper – to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken thighs and brown on all sides for about 5 minutes.
- Remove chicken from the pot and set aside. In the same pot, add onions, garlic, carrots, and celery. Sauté until onions are translucent.
- Return the chicken to the pot. Add potato cubes and chicken stock. Bring to a simmer and cook until chicken is cooked through, about 25 minutes.
- Remove chicken, shred the meat, and discard bones. Return meat to the soup.
- Add vermicelli noodles to the pot and cook until tender, about 5 minutes.
- Stir in chopped cilantro and lime juice. Season with salt and pepper to taste before serving.
