Ingredients
- Green plantains – 3 large
- Vegetable broth – 6 cups / 1.4 liters
- Onion – 1 large, chopped
- Garlic cloves – 3, minced
- Tomatoes – 2 medium, chopped
- Cilantro – 1/2 cup / 30 g, chopped
- Salt – to taste
- Vegetable oil – for frying
- Lime – 1, cut into wedges
Instructions
- Peel the green plantains and slice them into thick rounds.
- Heat the vegetable oil in a frying pan over medium heat.
- Fry the plantain slices until golden, then remove and flatten them using a plantain smasher or the bottom of a glass.
- Refry the flattened plantain slices until crispy and remove to drain on paper towels.
- In a large pot, heat a tablespoon of vegetable oil and sauté the chopped onion until translucent.
- Add the minced garlic and chopped tomatoes to the pot, cooking until the tomatoes are soft.
- Pour in the vegetable broth and bring to a rolling simmer.
- Add the fried plantain slices (patacones) and chopped cilantro to the soup base.
- Simmer for 10-15 minutes to allow flavors to meld, adding salt to taste.
- Serve hot with lime wedges on the side for a touch of freshness.
