Ingredients

- garlic cloves – 3, minced

- cremini mushrooms – 400 g / 14 oz, sliced
- chicken broth – 4 cups / 960 ml
- epazote (optional) – 1 sprig
- salt – to taste
- black pepper – to taste
- lime – 1, cut into wedges
- cilantro – for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the garlic and continue to cook for an additional 1 minute until fragrant.
- Stir in the poblano peppers and mushrooms, cooking until the mushrooms release their moisture and begin to brown, about 8 minutes.
- Pour in the chicken broth and add the epazote if using. Bring to a simmer and cook for 15 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with lime wedges and cilantro.
