Ingredients

  • oxtail – 2 lbs / 900 g
  • water – 8 cups / 1.9 L
  • diced tomatoes – 2 cups / 480 g
  • sliced carrots – 2 cups / 240 g
  • chopped onions – 1 cup / 150 g
  • minced garlic – 4 cloves
  • celery stalks – 2, sliced
  • red bell pepper – 1, chopped
  • cumin – 1 tsp / 2 g
  • oregano – 1 tsp / 1 g
  • salt – to taste
  • black pepper – to taste
  • fresh cilantro – 1/4 cup / 15 g, chopped
  • lime – 1, juiced

Instructions

  1. 1. Rinse oxtail pieces under cold water and pat dry.
  2. 2. In a large pot, bring water to a boil and add oxtail.
  3. 3. Reduce heat and simmer for 1 hour, skimming any foam.
  4. 4. Add tomatoes, carrots, onions, garlic, celery, and bell pepper to the pot.
  5. 5. Stir in cumin, oregano, salt, and black pepper.
  6. 6. Continue to simmer on low heat for another 1.5 hours, or until the meat is tender.
  7. 7. Taste and adjust seasoning.
  8. 8. Stir in cilantro and lime juice before serving.
